Classic Pork Menudo Recipe with Pineapple and Hotdog

Ingredients:
- 1 kg Premium Choice pork menudo cut
- 1/4 cup soy sauce
- 4 bay leaves
- 4 cloves garlic, finely chopped
- 1 medium onion, finely chopped
- 1/4 cup vinegar
- 5 hotdogs, sliced diagonally
- 3 cups pineapple juice
- 4 tablespoons sugar
- 1 red bell pepper, seeded and diced
- 1/4 cup pickled relish
- 1/4 cup breadcrumbs
- 1 tablespoon fish sauce
- Freshly ground black pepper to taste
- 1 cup fresh pineapple chunks
Preparation Steps:

Begin by marinating the pork menudo cut with soy sauce and bay leaves. For best results, marinate for at least 15 minutes or preferably longer.

Heat oil in a pan and sauté the garlic and onion until fragrant.

Add the marinated pork to the pan and cook, stirring occasionally.

Once the pork starts to cook through, pour in the vinegar and continue stirring.

When the pork changes color, add more soy sauce, cover, and let it simmer.

Prepare the hotdogs by slicing them diagonally.

Grind or crush hard bread to make breadcrumbs and add them to the pan, mixing thoroughly.

Incorporate the hotdog slices and season with fish sauce. Stir well.

Add the diced red bell pepper and season with black pepper. Taste and adjust seasoning as needed.

Finally, add the fresh pineapple chunks and stir. Let it cook for another 1-2 minutes.
This savory and slightly sweet pork menudo pairs excellently with steamed rice or puto, bringing out the rich flavors of the sauce. It's a dish that promises satisfaction and invites repeated cooking adventures.
